Preheat oven to 200C
Spread half of the rice crackers on an ovenproof dish
Sprinkle over 1 handful of cheese
Spread the remaining rice crackers over the first layer of crackers and cheese
Sprinkle over the remaining two handfuls of cheese
Top with the tomato, black olives and jalapenos
Place nachos in the oven for 10 minutes, or until the cheese is melted and beginning to brown.
Remove dish from the oven and place on a heatproof surface.
Top with dollops of guacamole and sour cream
Sprinkle over torn coriander leaves and serve!
