Mix sauce ingredients in a small bowl.
Heat a large frypan over med-high heat, add oil and bacon and fry until browned.
Add onion, garlic and ginger and fry for one minute.
Add carrot, capsicum and prawns and fry until prawns begin to turn opaque.
Meanwhile, prepare noodles according to packet instructions.
Place noodles into the frypan, pour over the sauce and toss to mix through.
Serve noodles garnished with spring onion and peanuts.
