Salt & Vinegar Fish Finger Sandwich

For Batter
  • 1 egg
  • 1 tsp mayonnaise
  • 2 tbsp flour
  • 1/4 tsp salt and epper
For Crumb
  • 1 cup Sea Salt & Balsamic Vinegar Delites
  • 1 cup Panko Crumbs
  • Fresh Parsley, chopped
For Assembly
  • Thick cut white bread
  • Tartare Sauce
  • Pickles, sliced
  • 400g Basa fillets (approximately 2 fillets)

  1. Step 1

    Preheat air fryer to 200ºC or put on to fish setting.

  2. Step 2

    Blend Delites in a food processor, then add to a bowl with panko crumbs and parsley. Set aside.

  3. Step 3

    Whisk 1 egg with mayonnaise, flour, salt & pepper.

  4. Step 4

    Dip a piece of basa into the batter, and then coat with crumb. Repeat until all coated.

  5. Step 5

    Add pieces to air fryer and cook for 10 minutes, flipping halfway.

  6. Step 6

    To assemble, coat a piece of bread with tartare sauce. Add sliced pickles, cos lettuce and fish fingers. Finish with another piece of bread.

  7. Step 7

    Slice sandwich in half and enjoy with a side of Delites.
