Easy Miso Ramen

Craving a cosy bowl of comfort that’s big on flavour but low on effort? This Easy Miso Ramen is your go-to weeknight saviour. Creamy, savoury, and packed with goodness, it comes together in just 15 minutes using pantry staples like miso paste, peanut butter, and coconut milk. Topped with golden crispy tofu and fresh garnishes, it’s a satisfying, slurp-worthy dish you’ll want to make again and again!

  • 1 cake Fantastic Instant Noodles
  • 3 tbsp vegetable oil
  • 2 cloves of garlic, minced
  • 4 spring onions, sliced, whites & greens separated
  • 2 tbsp miso paste
  • 2 tbsp smooth peanut butter
  • 200ml coconut milk
  • 750ml vegetable stock
  • 1⁄2 lime, cut into quarters
  • 250g firm tofu
  • 2 tbsp soy sauce
  • OPTIONAL: chili oil, black sesame seeds, coriander

  1. Step 1

    Cook noodles as per pack instructions, then set aside.

  2. Step 2

    Heat 1 tbsp of oil in a pot. Fry garlic and spring onion whites for 5 minutes. Stir in miso, peanut butter, coconut milk, vegetable stock and lime juice. Bring to a boil, then leave it to simmer.

  3. Step 3

    Meanwhile, crumble tofu into a hot pan with 2 tbsp oil, frying until golden, then coat with soy sauce.

  4. Step 4

    Place noodles into a bowl, serve broth over noodles and then dress with crispy tofu, chili oil, spring onion greens, black sesame seeds and coriander.
