Charred Sweetcorn Salsa

  • Kernals of one charred cob of corn
  • 1/2 tin black beans, drained and rinsed
  • 1 spring onion, finely sliced
  • 1/4 red capsicum, finely diced
  • 1/2 Lebanese cucumber, deseeded and finely diced
  • 1 long red chilli, deseeded and chopped
  • 1.2 cup coriander leaves, chopped
Serving suggestion
  • Thick sour cream or Greek yoghurt
  • Fantastic Original Rice Crackers

  1. Step 1

    Heat grill plate or BBQ. remove husk of corn and grill, constantly turning, until the kernals start to char. Careful not to burn the kernals.

  2. Step 2

    Once corn is cooked, using a sharp knife, carefully remove the kernals and place in a bowl to cool.

  3. Step 3

    Once cooled, combine all ingredients in a bowl and serve immediately with Fantastic Rice Crackers.

  4. Step 4

    Serving Suggestion: Place 1/2 teaspoon of sour cream on a Fantastic Original Rice Cracker, top with teaspoon of salsa. and enjoy. For vegan option, substitute non dairy yoghurt or sour cream.
