Heat chilli crisp in a small saucepan over medium heat.
Add garlic and ginger and fry for 30 seconds.
Add vinegar and sugar and stir to dissolve sugar.
Prepare noodles according to packet instructions, adding capsicum for the final 30 seconds.
Place noodles and capsicum into a medium bowl, pour over sauce and toss to coat.
Serve noodles with extra chilli on the side.
