For Coconut Dressing
- 1 can (400ml) coconut milk
- 1 cup coriander
- 1 cup mint
- 1 clove garlic
- 1 tsp ginger
- 1 tbsp fresh lime juice
- Salt to taste
For Noodle Salad
- 1 pack Fantastic Hokkien Fresh Noodles
- 20 cooked prawns, peeled and deveined
- 1 cup sugar snap peas, halved
- 1⁄2 cup fresh coriander leaves
- 1⁄2 cup fresh mint leaves
- Fried shallots and chili crisp to serve

Step 1
Prepare the Fantastic Hokkien Noodles according to pack directions, drain and set aside.

Step 2
Blend dressing ingredients together.

Step 3
In a large bowl or serving plate, toss cooked noodles with remaining ingredients, then dress and garnish to taste.
