Easy Prawn Laksa

  • 1/2 Pack Fantastic Hokkien Thin noodles (225g)
  • 1/2-1 small jar of laksa paste (add more according to taste)
  • 1 small zucchini, chopped
  • 1 small carrot, chopped
  • 2-4 stems broccolini, chopped
  • 1 head baby bok choy, ends cut off and rinsed
  • 150g fresh peeled prawns (or frozen)
  • 200ml coconut milk
  • 2 cloves garlic
  • 1 thumb size piece of ginger, sliced
  • 2 spring onions, sliced
GARNISH
  • Lime wedges, coriander, and sesame seeds to top
  • Optional - other delicious toppings include bean sprouts, fresh chillies, lemon wedges and Thai basil

Method
  1. Step 1

    1. Prepare the Fantastic Hokkien Thin Noodles according to pack directions, drain and set aside.

  2. Step 2

    2. Add oil to a medium saucepan and add ginger, garlic and spring onions. Saute until slightly golden and fragrant.

  3. Step 3

    3. Add the zucchini, carrot and laksa paste to the pot and cook on medium heat for 30 seconds.

  4. Step 4

    4. Add 2 cups of water and the coconut milk, bring to the boil and then simmer for 5 minutes.

  5. Step 5

    5. Add the broccolini and prawns and cook for another five minutes until prawns are cooked through.

  6. Step 6

    6. Add the drained Fantastic Hokkien Thin noodles to the pot and stir.

  7. Step 7

    7. Ladle into bowls and serve topped with lime, coriander and sesame seeds.
