Cook noodles as per packet directions, then drain and allow to cool.
Soak 1 piece of rice paper in a bowl of tepid water.
Once soft, place rice paper on a plate and add a small handful of noodles to one side of the rice paper.
Add a few pieces of carrot and cucumber on top of the noodles with a few mint leaves. Next add a few pieces of roast chicken and three prawns.
Fold rice paper edges over and roll into a tight roll.
Repeat steps 2-5 until all ingredients have been used.
Serve with sweet chilli sauce or spicy peanut satay sauce.
