‘Zingy’ Fresh Herb Noodle Salad

Noodle Salad
  • 150g Fantastic Fresh Hokkien Noodles
  • 1 small carrot, finely sliced
  • 1/4 cucumber, finely sliced
  • 1/4 capsicum, finely sliced
  • 1 spring onion, finely sliced
  • 1 tbsp fresh chopped mint
  • 1 tbsp fresh chopped coriander
Dressing
  • 1/2 - 1 tsp sugar - use coconut, brown or raw
  • 1 tsp sesame oil
  • 2 tsp soy sauce
  • 1/2 tbsp balsamic vinegar
  • Sesame seeds (optional to top)

Method
  1. Step 1

    Prepare the Fantastic Fresh Hokkien Noodles according to pack directions. Drain and set aside.

  2. Step 2

    Combine the dressing ingredients in a jar or small bowl and shake or mix to combine.

  3. Step 3

    Finely slice all of the ingredients.

  4. Step 4

    Combine the vegetables, herbs, noodles and dressing in a bowl and toss to mix and coat evenly ingredients evenly in the dressing.

  5. Step 5

    Serve topped with sesame seeds, extra spring onion and herbs.
