Cut the chicken thigh into popcorn sized pieces (approx. 2x2cm)
In a large bowl, mix the milk, lemon juice, soy sauce, honey, sambal and pepper. Add the chicken pieces to the bowl and stir until evenly coated. Marinate for 1 hour.
Either using a mortar and pestle or a food processor, crush or blitz the Delite crackers until they resemble breadcrumbs.
Coat the marinated chicken in the Delites cracker crumb, then spray generously with olive oil. Airfry pieces at 180ºC for 7-8 minutes.
Sprinkle with salt and serve with a dipping sauce of your choice.
