Cut the chicken thigh into popcorn sized pieces (approx. 2x2cm)
In a large bowl, mix the milk, lemon juice, soy sauce, honey, sambal and pepper. Add the chicken pieces to the bowl and stir until evenly coated. Marinate for 1 hour.
Either using a mortar and pestle or a food processor, crush or blitz the Delite crackers until they resemble breadcrumbs.
Coat the chicken in the Delite cracker crumbs, set aside for 10 minutes. Meanwhile heat the oil to 160C (this resting time will help the crumbs stick to the chicken when in the fryer)
Fry the chicken pieces until golden (approx. 2 minutes). Take chicken out of oil and drain on paper towels. Sprinkle with salt.
Serve popcorn chicken with a dipping sauce of your choice.
