Place soy milk and chicken stock into a small saucepan, bring to the boil and simmer for 10 minutes.
Mix together the soup base ingredients in a small bowl, then divide between two soup bowls.
Heat a medium frypan over med-high heat, add oil and pork, break up the pork with a wooden spoon and fry until browned.
Add garlic, ginger, chilli bean & oyster sauces and fry for 2 minutes.
Prepare noodles according to packet instructions, adding the bok choy for the final 30 seconds.
Pour the hot soup over the soup base in the bowls and stir to mix through.
Add noodles and top with the pork mix.
Garnish with bok choy, soft boil egg, fried shallot and sesame seeds.
