Crispy Rice Paper Noodle Rolls

Crunchy on the outside and packed with savoury noodle goodness, these Crispy Rice Paper Noodle Rolls are an easy crowd-pleaser. Filled with Fantastic instant noodles and veggies, then air-fried until golden, they’re perfect as a snack, appetiser or fun weeknight side. Serve hot with a zingy soy and lime dipping sauce.

Ingredients
  • Fantastic Instant Noodles
  • 8 rice paper sheets
  • 1 cup frozen mixed vegetables
  • 1 tsp white sesame seeds
  • spray oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • Dipping Sauce

  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp lime juice
  • ½ tsp sugar
Method
  • Prepare noodles according to packet instructions, adding the frozen vegetables for the final 30 seconds. Drain and transfer to a large bowl.
  • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and water.
  • Toss the cooked noodles and vegetables with the sauce until well coated.
  • Fill a large shallow bowl with warm water. Dip 1 rice paper sheet for 30 seconds until soft but still firm. Transfer to a board.
  • Place about ¼ cup of the noodle mixture near the bottom edge of the rice paper. Fold in the sides and roll tightly. Repeat with remaining sheets.
  • Place rolls on a baking tray, spray lightly with oil, and sprinkle with sesame seeds.
  • Air fry at 200°C for 15 minutes, or until golden and crisp.
  • Enjoy crispy rolls with dipping sauce on the side.
