Baba Ganoush Dip

  • 1 large eggplant, roasted or chargrilled
  • 1-2 garlic cloves, crushed
  • ¼ cup tahini
  • ½ tsp cumin seeds
  • ¼ cup lemon juice
  • 2 tbsp parsley, chopped
  • Salt

  1. Step 1

    Using a food processor, combine eggplant, garlic, tahini, cumin seeds, lemon juice, parsley, salt and pepper together, until mixture is a smooth consistency.

  2. Step 2

    To serve, place the baba ganoush dip in a bowl and sprinkle over a few extra cumin seeds.
