In a large pot over medium heat, add olive oil.
Once the oil is hot, add carrots, celery, capsicum and onion into the pot and sauté for a few minutes.
Add in the garlic and sauté for 20 seconds.
Add the chicken broth, stirring everything together. Then increase the heat to high and cover until simmering.
Stir in the chicken breast, dried thyme, salt and pepper. Cover and simmer for 2 minutes.
Add pack of Fresh Hokkien Thin Noodles into the pot and simmer for 3 minutes.
Serve with slices of lemon and fresh parsley.
