Cook Fantastic Fresh Singapore Noodles as per packet instructions.
Heat peanut oil in a wok on high heat. Add onion and capsicum, sautéing for a couple of minutes until vegetables are glazed.
Add your leftover Christmas meat and veggies, then coat with the vinegar, hoisin sauce and soy sauce
Add the cooked noodles and toss gently to coat the noodles with sauce evenly.
Season with salt and pepper to taste.
Serve hot, garnished with spring onions.
