Crispy Chicken Salad

  • 500g chicken tenderloins
  • 12-16 Fantastic Sweet Chilli & Sour Cream Rice crackers
  • 1/2 cup panko breadcrumbs
  • salt and pepper
  • 1 green oak lettuce, washed with leaves kept whole
  • 1 cucumber, diced in chunks
  • 1 punnet of mixed grape tomatoes, some halved and some whole
  • 1 cup of tasty cheese (or feta)
  • Mint leaves for garnish
  • Lime wedges
  • Canola oil, for cooking chicken

  1. Step 1

    In a food processor add the Fantastic Rice Crackers and pulse until they resemble breadcrumbs.

  2. Step 2

    Mix the Fantastic Rice Crackers and panko breadcrumbs together and put on a plate.

  3. Step 3

    Coat the chicken tenderloins in the crumb mixture then set aside on a plate.

  4. Step 4

    Put some oil in a frying pan, enough for shallow frying the crumbed chicken. Turn on heat and wait until oil gets hot. Add crumbed chicken and cook until golden brown on both sides, or until chicken is cooked.

  5. Step 5

    Once all the chicken is cooked, set aside on a plate.

  6. Step 6

    Assemble the salad on a large serving plate then place cooked crumbed chicken on top.

  7. Step 7

    Sprinkle on cheese and place mint leaves on top.

  8. Step 8

    Serve with some lime wedges.
