Mix together the pork mince, wine, soy sauces, pepper and five spice and allow to marinate for 10 minutes.
Meanwhile, mix together the sauce ingredients in a small bowl.
Heat a large frypan over high heat, add oil and marinated pork. Break up the pork with a wooden spoon and fry until cooked through and crispy.
Prepare noodles according to packet instructions, drain and place into a large bowl, retaining a little of the cooking water.
Pour over sauce and toss to combine, adding a little cooking water to loosen the sauce if necessary.
Serve noodles topped with pork mince and garnished with spring onion and peanuts. Stir fried green beans make an ideal side.
