Goats curd, basil and lemon crema with Kalamata olive crumbs

  • 150g goats curd
  • 1/2 cup sour cream
  • 1/2 cup basil leaves
  • zest of 1/2 lemon
  • 1 garlic clove, crushed
  • salt and pepper to taste
Kalamata crumb
  • 1 tspn olive oil
  • 1/4 cup kalamata olives, pitted and finely chopped

  1. Step 1

    CREMA: Combine all ingredients for the crema in a food processor and blitz until combined. Pause as required to scrap down sides of food processer to ensure an even blend.

  2. Step 2

    OLIVE CRUMB: Heat the olive oil in a small frying pan over a medium heat. Add the Kalamata olives and cook for approx 5 minutes until crispy. Set aside to cool.

  3. Step 3

    SERVING SUGGESTION: Place the Crema into a bowl and sprinkle the olive crumb over the top. Serve with Fantastic Rice Crackers.
