Marinate the pork for 10 minutes in a mixture of ginger, garlic, cornflour, water, soy sauce and sherry.
Prepare the noodles according to the packet directions, keep warm.
Heat oil in a wok over medium-high heat. Add the pork mixture and stir-fry for 4 minutes or until pork loses its pink colour.
Add the capsicum and carrot and stir-fry for 1 minute.
Stir in ¼ cup water, onions, chilli sauce and lemon juice and cook for 2 minutes.
Stir in the noodles, sprinkle with peanuts and serve.
