Old School Favourite: Beef and Black Bean Noodles

  • 1 pack 350g Fantastic Singapore Noodles
  • 2 tblspns vegetable oil
  • 1 medium onion, cut into wedges and separated
  • 2 cloves of garlic, crushed
  • 300g cauliflower broken into tiny florets
  • 100g snow peas or green beans, trimmed and cut into diagonal slices
  • 1/2 capsicum, cut into strips
  • 500g beef, cut into thin strips
  • 100g bean sprouts, tails pinched off
  • 3 tblspns black bean sauce mixed with 1/3 cup water
  • finely chopped fresh red chilli (optional)
Garnish (optional)
  • 1 finely sliced spring onion
  • chopped coriander

Method
  1. Step 1

    Prepare noodles according to pack directions, drain, set aside in bowl and cover with tea towel to keep warm.

  2. Step 2

    Heat wok until hot, add 1 tbspn oil and stir fry beef quickly until cooked. Set beef strips aside to rest. Drain oil from wok.

  3. Step 3

    Reheat wok, add remaining oil, then onion and garlic, Stir fry over high heat for one minute. Be careful not to burn the garlic.

  4. Step 4

    Add cauliflower, snow peas and capsicum to wok and stir fry for 2 minutes.

  5. Step 5

    Reduce heat to medium. add beef to wok, and combine with vegetables. Add noodles and an extra 3 tblspns of water, bean sprouts and black bean sauce. Toss together to coat the noodles until heated through. Add chilli to taste.

  6. Step 6

    Serve immediately and garnish with strips of spring onion or coriander
