Cook Fantastic Fresh Singapore Noodles as per packet instructions.
Mix peanut butter, rice wine vinegar, soy sauce, honey, sesame oil, garlic and hot water together until smooth.
Gently but evenly coat cooked noodles in the mixed sauce, then set aside.
Wet a piece of rice paper briefly, then arrange lettuce, noodles, red capsicum, red cabbage and carrots on top. Make sure to centre all ingredients on the rice paper and leave some space along the edges.
Fold the bottom of the rice paper up and over your ingredients, then tightly roll the rice paper up from one side to the other. Finish by folding down the top of the rice paper. Repeat the process until all ingredients have been used.
Once the rice paper has hardened a little, slice each roll in half using a sharp knife and arrange onto the plate of your choice.
Serve at room temperature with some extra dipping sauce if desired.
