Pomegranate, Olive, Walnut, Red Onion, Chilli and Mint Salsa

  • 1 pomegranate, deseeded and drained
  • ½ red onion, finely diced
  • 1 red chilli, deseeded and finely chopped
  • ½ cup pitted green olives, finely chopped
  • ⅓ cup toasted walnuts, finely chopped
  • 1 tsp orange zest
  • 1 tbsp orange juice
  • ¼ cup mint leaves, finely chopped
  • ¼ cup flat leaf parsley leaves, finely chopped
  • Salt flakes
  • Freshly ground black pepper
  • 2 tbsp Greek style yogurt

  1. Step 1

    In a small mixing bowl, combine pomegranate seeds, 1 tablespoon of pomegranate juice, onion, chilli, olives, walnuts, zest, orange juice, mint, 2 tablespoons of parsley, salt and pepper, stirring until combined.

    Spoon salsa into a serving bowl, top with yogurt in the centre and sprinkle over remaining parsley.

  3. Step 3

    Serve with Fantastic Rice Crackers.
