Prawn Laksa

  • 1 packet Fantastic Fresh Hokkien Thin Noodles
  • 1 small jar laksa paste
  • 2 zucchinis
  • 2 carrots
  • 300g cooked & peeled prawns
  • 400ml coconut milk
  • 2 tbsp fish sauce
  • 4 cloves garlic
  • 2 thumb sized pieces of ginger, sliced
  • 2 spring onions, sliced
  • Limed wedges, bean sprouts and fresh chilli to top

  1. Step 1

    Prepare the Fantastic Hokkien Thin Noodles according to pack directions, drain and set aside.

  2. Step 2

    Add oil to a medium saucepan and add ginger, garlic and spring onions. Sauté until slightly golden and fragrant.

  3. Step 3

    Add the zucchini, carrot and laksa paste to the pot and cook on medium heat for 30 seconds.

  4. Step 4

    Add 2 cups of water and the coconut milk, bring to the boil and then simmer for 5 minutes.

  5. Step 5

    Add the prawns and cook for another 2 minutes until prawns are warmed through.

  6. Step 6

    Add the drained Fantastic Hokkien Thin noodles to the pot and stir.

  7. Step 7

    Ladle into bowls and serve topped with toppings.
