Roast Pumpkin Hummus Dip

  • 300g roasted pumpkin
  • 1 clove garlic, crushed
  • ¼ cup tahini
  • 400g tin chickpeas, drained and rinsed
  • ¼ cup lemon juice
  • ¼ - ½ cup olive oil
  • Pinch of salt
  • Pinch of pepper

  1. Step 1

    Using a food processor combine roasted pumpkin, garlic, tahini, chickpeas, lemon juice, olive oil, salt and pepper together until mixture is a smooth consistency.

  2. Step 2

    To serve, place hummus in bowl and drizzle with a little extra olive oil.
