Roasted Red Capsicum, Smoked Almond, Chilli and Mint Salsa

  • 2 roasted red capsicum, peeled, deseeded and diced
  • ½ cup smoked almonds, roughly chopped
  • 1 garlic clove, peeled and crushed
  • 1 green chilli, deseeded and finely chopped
  • ¼ cup mint leaves, chopped

    In a medium mixing bowl place roasted capsicum, smoked almonds, garlic, green chilli, mint leaves, salt and pepper together, stirring until well combined.
