Roasted tomato and chilli salsa

  • 1 punnet cherry tomatoes
  • 2 cloves garlic, unpeeled
  • 1 long green chilli
  • 1/2 red onion, finely diced
  • 1 lime, juiced
  • 1/2 cup coriander leaves, chopped
  • Salt & pepper to taste

Method
  1. Step 1

    Heat a large frying pan over high heat. Dry fry tomatoes, unpeeled garlic and green chilli until skins are charred and blistered.

  2. Step 2

    Remove from heat, peel the garlic and remove the stem of the chilli. Careful, ingredients will be hot.

  3. Step 3

    Place peeled garlic and de-stemmed chilli into a mortar and pestle or food processor and pound or pulse until the ingredients form a paste.

  4. Step 4

    Add tomatoes and pound or pulse until the tomatoes are broken up. Transfer tomato mix to a medium size bowl.

  5. Step 5

    Add the onion, lime juice and coriander leaves and stir to combine.

  6. Step 6

    Season to taste with salt and pepper and serve with Fantastic rice crackers.
