Satay Chicken Noodle Stirfry

SATAY SAUCE
  • 1/2 cup coconut milk
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce or tamari
  • 2 tspn minced garlic
  • 1 tspn curry powder
CHICKEN
  • 2 chicken breasts
STIRFRY
  • 1 pack Fantastic Fresh Hokkien Noodles (450g)
  • 1 onion, diced
  • 1/2 cup mushrooms, sliced
  • 1 bunch broccolini, chopped
  • 1/2 red capsicum, chopped
  • 1 cup diced pumpkin

Method
  1. Step 1

    Dice the chicken into bite size pieces and set aside.

  2. Step 2

    Mix all satay sauce ingredients together in a bowl. Add the diced chicken and stir together

  3. Step 3

    Heat oil in a large frypan over medium heat.

  4. Step 4

    Add the chicken and cook for 8-10 minutes until cooked through, set aside.

  5. Step 5

    Add the onion and mushrooms to the pan, cook on medium heat for 3 minutes. Add a small splash of oil if needed.

  6. Step 6

    Add the broccollini, capsicum and pumpkin to the pan with a splash of water. Stir and leave to simmer, adding small amounts of water occasionally.

  7. Step 7

    Cook the noodles according to pack instructions, drain and set aside.

  8. Step 8

    Once the vegetables are soft, add chicken and noodles to the pan and stir for five minutes to make sure the chicken is cooked.

  9. Step 9

    Season with salt and pepper and serve.
