Smokey Roasted Tomato, Capsicum and Pomegranate Molasses Dip

  • 1 large vine tomatoes, halved and roasted
  • 1 red capsicum, roasted, peeled and deseeded
  • 2 garlic cloves, crushed
  • ½ tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp pomegranate molasses
  • ¼ cup parsley leaves
  • Salt
  • Pepper

  1. Step 1

    Using a food processor, combine roasted vine tomatoes, roasted red capsicum, garlic, smoked paprika, olive oil, pomegranate molasses, parsley leaves, salt and pepper together until mixture is finely chopped.

    Place the dip into a serving bowl and enjoy.
