Teriyaki Tofu and Hokkien Noodle Salad With Toasted Sesame Dressing

  • 450g Fantastic Hokkien Fresh Noodles
  • 200g pack Teriyaki tofu, diced
  • 2 spring onions, finely sliced
  • 1 Lebanese cucumber, deseeded and sliced
  • ½ cup podded edamame (soy beans), thawed
  • 1 avocado, deseeded and diced
  • ¼ cup pickled ginger
  • ¼ cup Japanese roasted sesame dressing (e.g. Kewpie)
  • Toasted sesame seeds, to serve

  1. Step 1

    Prepare the noodles according to pack instructions, drain and refresh under cold water.

  2. Step 2

    In a large mixing bowl, combine cooked noodles, tofu, spring onions, cucumber, edamame, avocado, pickled ginger and sesame dressing, tossing until well combined.

  3. Step 3

    To serve, sprinkle over sesame seeds.
