Thai Red Curry Pork Noodles

Noodle curry
  • 1 pack 350g Singapore noodles
  • 250g minced pork (substitute chicken mince if desired)
  • 2 cups snow peas, sliced.
  • 1 tblspn minced garlic
  • 1 tblspn red curry paste
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 1 pinch turmeric powder
  • 1 tbspn fish sauce
  • 1 tspn sugar
  • 1 tblspn lime/lemon juice
Garnish to serve (optional)
  • Chopped red chilli and coriander leaves

  1. Step 1

    Prepare noodles according to pack directions, drain and cover bowl with tea towel to keep warm.

  2. Step 2

    In a medium saucepan, heat the coconut milk on low heat and stir in the curry paste. When this begins to simmer, add all the remaining ingredients except for the pork and snow peas. Stir for 2 minutes. Do not boil.

  3. Step 3

    Add the pork mince to the saucepan and break up with a wooden spoon or fork and cook thoroughly until pork is cooked. Approx 5 minutes.

  4. Step 4

    While the pork is cooking, divide the noodles into serving bowls. Once the pork is cooked, add the snow peas for 1 or 2 minutes then ladle the red curry mixture over the noodles .

  5. Step 5

    Garnish with coriander and chopped red chilli and serve immediately
